Fufu know as foofoo,fufuo,foufou in other countries,but known as fufu in Ghana is a staple food made by mixing and pounding separate equal portions of boiled cassava and plantain.It is then adjusted to either increase or decrease the viscosity of the fufu depending on the personal preference,other tubers can also be used such as yam,cocoyam etc mixed with the plantain and served with groundnut soup also known as peanut butter soup,palm nut soup or light soup.It is eaten with the fingers and a small ball of it can be dipped into an accompanying soup.

Cassava is believed to have been introduced to Africa by Portuguese traders from Brazil in the 16th century.In modern day,Fufu is believed to have originated from the Akans (Asantes,Fantes,Akuapems,Guans,Akyems).Today,Fufu is enjoyed by almost every tribe in Ghana.

The Fufu is pounded in a giant wooden mortar and pestle,in recent times,the invention of Fufu machine has made the preparation less labor intensive.

A 100g dry weight Fufu contains 2g of protein,0.1g of fats and 84g of carbohydrates.267 kcal of food energy in a 100g serving made up with water.It is very low in cholesterol and rich in potassium.
