Better pay that is not market driven (like through an increased minimum wage) quickly evaporates through economic corrections like inflation and unemployment. There is no magic wand that can be waved where all service workers can suddenly make $25 per hour. Wage increases are only sustainable when driven by education, knowledge, and experience.
