Aquaponic Greenhouse Lettuce in the Dining Halls

In an effort to support sustainable agriculture, the New Hampshire Agricultural Experiment Station at the University of New Hampshire has opened a new aquaponic greenhouse facility that aims to provide a model for integrating land-based aquaculture systems with hydroponic plant production that can be used locally and regionally to increase sustainable food production. Earlier this month, Hospitality Services partnered with the Experiment Station and is now purchasing approximately 800–1000 heads of fresh Boston Butterhead lettuce per week that is utilized in the dining halls. Guests look forward to enjoying the lettuce in salads and menu offerings like Southwest lettuce wraps. With its fresh, sweet, buttery flavor this item doesn’t last long! Learn more:
