UNH Upward Bound Students Learn About Nutrition

The University of New Hampshire Upward Bound program helps eligible high school students achieve their dreams of going on to and being successful in higher education. During the summer students participate in internships at a UNH Department or local organization, complete a freshman English course at UNH, and attend workshops to prepare them for their new academic and social lives at college.

On Friday, July 21, 2017, Upward Bound students attended a Nutrition Presentation at Holloway Commons hosted by UNH Dining Registered Dietitian, Rochelle L’Italien, and Chef Todd Sweet. The presentation included information about smart eating food groups, creative dining hall meals, grocery shopping tips and meal planning. Rochelle discussed the Wildcat Plate, used by dining halls to promote nutritious choices and minimize waste. Students also had the opportunity to create their own healthy vinaigrette dressings to sample and take home with them.

Try Chef Todd’s Inspiration Vinaigrette recipe below for your next meal!

Mustard-Tarragon Vinaigrette:

Yield: 4 portions

3 tablespoons olive oil
1 tablespoon vinegar
1 tsp. sugar or honey
2 tsp. Dijon mustard
½ tsp. dry tarragon leaves
¼ tsp. salt

Directions:
Place all of the ingredients in a small jar or a bowl and combine. Drizzle over salad greens, cooked lentils or grilled chicken.
