For seven years now Farm to YoU NH students at the Food Production Field Experience Class have been growing a mix of vegetables and produce for the UNH Dairy Bar, Dining and Conferences, and Catering. In addition to year-round salad mixes and leafy greens, students are harvesting carrots, beets, Swiss Chard and spinach at the high tunnels for the winter season.
The high tunnels can enable temperatures of up to 75–80 degrees, which helps plants from freezing throughout the night. Low tunnels are also used to experiment with growing onions, garlic, and even baby ginger. Before these low tunnels were introduced, growing produce such as ginger was unheard of in our region.
