I think sweetness is a really interesting and often overlooked flavor, I don’t really think about it much when I’m actually drinking coffee but now that I think about it I think I know just what you are talking about.
I totally agree some places doing weaker single origins with less body are doing really amazing stuff and a lot of them are doing it badly. Flavor is a funny thing though, because a lot of the hipper places that I find incredibly bland here in Melbourne are extremely well respected in the local scene. It leads me to believe my palate is just different, maybe based on where I grew up.
