Although I agree you have to get it right one door at a time, I don’t think breaking big is an issue as long as you can back the dream up. The E-myth by Michael E. Gerber is a great book about scaling your business. He talks about knowing exactly where you want to end up with your business and creating the processes to make it happen. All the things you mention Jason, like, customer service, training, pricing etc need a process attached to them so it can be replicated in each further shop. I don’t think there’s an issue dreaming big as long as you do the work to back it up. There’s a difference between I want Starbucks scale and I want three pie shops worth 1,000,000 (the thought out example in his book).
