Low-Carb, Vegetable, Flax Crust Pizza

This healthy, low-carb, flax-crust pizza is a delicious clean-eating option to one of the most popular American comfort foods — typically doused with grease and preservatives. This pizza is actually GOOD for you!

Crust Ingredients:

  • 1 1/2 cups ground flax seed or flaxseed meal
  • 1 egg
  • 3 tablespoons of olive oil
  • Dash of salt
  • 1 teaspoon of dried basil
  • ¼ of water (may need to add more depending on dough texture).

Crust Instructions:

  • Mix ground flax seed with egg
  • Add olive oil, salt and dried basil
  • Add water
  • Push dough flat onto a baking sheet, keeping it about 1/2 inch thick
  • Bake at 450 degrees for about 8 minutes

Homemade Red Sauce Ingredients:

  • 4–6 fresh Roma tomatoes (Romas are best due to low moisture content)
  • 8–10 fresh basil leaves or 2 teaspoons of dried basil
  • 1/2 to 1 red bell pepper — diced
  • 1/4 to 1/2 sliced red onion
  • 1–2 cloves of raw garlic

Sauce Instructions:

  • Place all ingredients into blender or vita-mix: tomatoes, fresh basil leaves, red bell peppers, red onions, garlic
  • Poor into a pot and simmer for about 20–30 minutes over medium heat to concentrate it and minimize raw garlic flavor

Toppings Ingredients:

  • ½ white onion
  • 1 red bell pepper
  • Sliced mushrooms (quantity to be determined to your liking)

  • 1 cup of shredded cheese
  • Handful or so of sliced olives

Toppings Instructions:

  • Sauté white onions
  • Once onions are translucent, add sliced red bell peppers
  • Once bell peppers are soft, add in sliced mushrooms
  • Remove after mushrooms are soft (they only need a few minutes); set aside

Final Steps

  • Once crust is “done,” take out of oven and add sauce. Then add shredded cheese on top.
  • Bake for another 5 minutes or until cheese is melted
  • Top with sautéed veggies and olives…and Enjoy!
