Mexican Ground Beef Casserole

Looking for an easy, hearty, and flavorful dinner recipe? This Mexican ground beef casserole is the perfect weeknight meal! It’s packed with bold Mexican flavors like chili, cumin, and salsa and is sure to please the whole family.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • 1 14.5 oz can diced tomatoes
  • 1 8 oz can tomato sauce
  • 1 4 oz can diced green chiles
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup frozen corn
  • 8 small flour or corn tortillas
  • 2 cups shredded Mexican cheese blend
  • Chopped cilantro, sour cream, and avocado for topping

Instructions

  1. In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and onion is soft, about 5–7 minutes. Drain excess grease if needed.
  2. Add the garlic and cook for 1 minute until fragrant.
  3. Stir in the olive oil, taco seasoning, diced tomatoes, tomato sauce, green chiles, black beans, and corn. Let the mixture simmer for 5–10 minutes.
  4. Meanwhile, cut the tortillas into 1-inch strips. Layer half the tortilla strips in the bottom of a greased 9x13 baking dish.
  5. Top with half the ground beef mixture followed by 1 cup of shredded cheese.
  6. Repeat layers ending with the cheese.
  7. Bake at 350°F for 20–25 minutes until hot and bubbly.
  8. Let stand 5 minutes before serving. Top with cilantro, sour cream, and avocado.

This Mexican casserole is such an easy dinner! Just brown the beef, stir in the ingredients, layer it up, and bake. The flavors combine beautifully and it reheats well for leftovers. Serve it up with rice, beans, salad, or chips for a complete Mexican-inspired meal. Adjust spice levels to your taste by using mild or hot salsa and more or less green chiles. Enjoy!
