Here’s how to make
Ingredients:
- 200 grams rice flour
- 100 grams grated coconut (for dough)
- 100 grams grated coconut (for coating)
- 100 grams palm sugar (gula aren)
- 1/4 teaspoon salt
- Banana leaves (for wrapping)
Instructions:
1. Preparing the Filling:
— Mix grated coconut and palm sugar in a pan. Heat the mixture until the palm sugar melts and blends with the coconut. Set aside to cool and harden.
2. Preparing the Dough:
— In a bowl, mix rice flour, grated coconut, and salt. Gradually add water while stirring until a smooth dough forms.
3. Shaping the Dough:
— Take a small portion of the dough and flatten it in your palm. Place a teaspoon of the coconut-palm sugar filling in the center. Fold the dough to encase the filling and shape it into a ball.
4. Wrapping in Banana Leaves:
— Cut banana leaves into small squares and briefly heat them over a flame to make them pliable. Place a filled dough ball on a banana leaf square and fold it into a triangular parcel. Secure with toothpicks.
5. Steaming:
— Steam the wrapped parcels for about 15–20 minutes until the dough is cooked.
6. Coating with Grated Coconut:
— After steaming, roll the cooked parcels in grated coconut while they are still warm.
7. Ready to Serve:
— Kue Putri Mandi is now ready to be enjoyed as a delicious traditional dessert.
