Camote is Spanish for “sweet potato”. My husband and I used to grow these plants and they produce beautiful flowers, similar to the Morning Glory flower in appearance.

Many people in the Caribbean are used to having sweet potatoes in salads, candied, boiled and crushed with butter or cheese, or as chips. In some Spanish speaking nations and in Asian homes, the camote is also enjoyed with milk.

People from Latin America carried the sweet potato to the Philippines, where adults and children alike enjoy the nutritional benefits of the complex carbohydrate in snacks or in main dishes.

Ingredients To make Camote Con Leche, you will need:

  • Freshly baked camotes
  • Milk
  • Cinnamon

Method

  • Remove the hot sweet potato from its skin.
  • Slightly mash the starchy food in a bowl
  • Add a little milk and cinnamon to taste

You can enjoy this at any time of day. As you can see, once you have hot baked potatoes available, it doesn’t take long to prepare the dish. By eating this in the morning, you get enough energy to carry you through until lunchtime. Plus, there’s less sugar than you find in cereals and you get lots of protein and other nutrients as well.

If you are a bodybuilder or are trying to gain more muscle mass, this is a good food to eat regularly. If you bake the camotes on the weekend, peel a few and store them for later. You can simply microwave one in the morning so it’s nice and hot and add it to the milk. You’ll have breakfast in five minutes.
