I only bake bread, never buy it :) I hate that squishy junk they call “bread” in the store.
I use a machine to knead it. I tried kneading in college, but it was too hard to develop the dough so it’s nice and smooth. That changes the texture of the final result. My mother only kneads dough herself. She’s great at it. I use machines to knead for me, and it works well.
Making it myself allows me to use wholesome ingredients and no additives of any kind. I mix in rye, barley, and spelt whole grain flours along with wheat.
