Tumis kacang panjang a vegan recipe is simple easy to make and this is super tasty. It is better than take out. For the protein you can add fried tempe.

Long bean or kacang panjang in Indonesia is ancient vegetable and a very popular vegetable in Southeast Asian and East Asian cuisines. It is from India and Africa.

The long bean also known as snake bean, asparagus bean or Chinese long bean. The taste is not sweet like green bean, but it is slightly sweet and less flavour like beany taste. You can find easily in small warung, traditional market even at the super market. The price around IDR 2000 in a small warung in Bali who sell vegetables.

The long beans are good source of Vitamin A, protein, riboflavin, thiamin, iron, phosphorus, and potassium, and a very good source of vitamin C, folate, magnesium, and manganese.

You can eat long bean, raw as a “lalapan” as a side dish and served with sambal terasi, sambal tomat that is very common in Indonesia or you can cook it as stir fry, sayur lodeh or just steam. The young leaves, we call it “Lembayung” you can cook as well, make it as a lemnayung stir fry or eat as lalapan.

Fried tempe

Preparing long bean is simple, just wash in the water and cut as you like. Here you don’t need much ingredient. We use basic ingredients such as garlic, shallot, onion and chilli. If you don’t like spicy, just skip it.

How to make tumis kacang panjang a vegan recipe?

Step one

Prepare 6 long beans, cut as you wish around 2 cm. Put aside.

Step two
Cut one tempe, julienne slice or as you wish, and fried till brown, put aside.

Step 3

Prepare the ingredients:
2 shallots, cut thinly slice
2 garlics, cut thinly slice
½ onion, cut thinly slice.
Big red chilli/ chilli– cut thinly slice, skip if you don’t like spicy.

Heat the pan, pour 2 tablespoons vegetable oil, fry the ingredients till fragrant, put the long bean, add a little water, add salt and pepper mix well then taste.

After that add fried tempe and cook until the long beans tender around 10 minutes.
