Another Low Key Day. Spicy Chicken with an Ice Cold Rain.
More insane rains today but things have calmed now and it’s just an ice cold summer shower and I love that.
I have work to do tonight (the real stuff that I actually get paid to do) and am feeling just a little under the weather so I just made myself a very simple dinner of sort of a Mediterranean BBQ sandwich on naan and left it at that.
Marinated chicken in butter milk, salt, 2 whole cloves, cinnamon, chicken broth, cumin and turmeric.
Actually this is starting to sound more Caribbean. I’ll go with that. That’s what I meant. If I had some Scotch bells it definitely would.
After sitting in the fridge I baked it at 350f for 1 hour 15 minutes.
BBQ got some brown sugar, Tabasco (and plenty of it,) honey, cumin, salt, apple cider vinegar, Worcestershire, rasped garlic for more kick, and butter for a fat and emulsifier.
Shredded chicken in the pan with some of the marinade liquid. I hit it with my spicy BBQ sauce.
The naan got the last of my burrata cheese. I am sad to see it go. It will be another month before I’ll get more.
Not bad for a slap-dash dinner. The cheese made it in all honesty. Without that this just would have been OK.
I take that back. The rasped garlic made the BBQ for sure. That was my favorite part.
I gotta get movin’ tonight. I’ve got a long, busy weekend to plan out and some new recipes from Mamaw’s cooking bible to go through. I figured out a few things to do with them and we’ll get into that in the next few weeks.
