Today Was Catless. Too Bad, He Missed Out on a Nice Crab Dip.

Drier weather today. No sign of my little stray cat friend. I’m guessing I won’t see him until it rains again. That’s fine as it gives me some time to make him a little shelter.

The sky was staring back.

I’ve still got some crab meat left over and it dawned on me to make some crab dip for dinner.

And it was a good excuse to clean out the fridge a little in anticipation of the new ingredients coming in this week.

There’s no recipe here. I just winged it.

I made crab dip, tuna dip, dip, dips and more dips at the catering company in Denver. If you have your base memorized that’s all you need.

You just need some room temp cream cheese, mustard, a little mayo and a little sour cream. Using these you can make a dip out of anything.

I added celery and onion and made an anchovy paste for flavor before adding the crab meat.

Mozzarella cheese just to get rid of it. Same for some tomatoes.

I roasted some garlic so there would be a nice garlic surprise every now an then. I saved the oil and brushed these pitas with it.

Everything on a baking sheet. The bowl of dip goes on just in case it bubbles over the bowl.

Topped with the last of my hoop cheese.

Baked at 400f for 12 minutes. Hot sauce on the side.

I should make pita chips more often. They’re amazing. Particularly with that garlic infused oil. I topped the cheese with black pepper and oregano.

I should do more little catering recipes like this. I’m sure I could think of dozens I used to make. The only problem with that idea is that I rarely throw parties or have more than a few people to cook for at a time. I’ll figure it out though.
