Cloud Bread by the Loaf
8 eggs, separated
1/2 tsp cream of tartar
6 ounces sour cream
1/2 tsp baking soda
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/2 cup coconut flour
butter or crisco
Grease a bread loaf pan with butter or crisco extremely well. Preheat oven to 300° F.
Beat whites until stiff peaks form.
Mix remaining ingredients (cream of tartar, sour cream, baking soda, garlic powder, onion powder, salt, and coconut flour) into a paste.
Slowly mix yolk mixture and beaten whites gently until relatively well-mixed. Don’t overmix.
Spoon batter into greased loaf pan and bake 45 minutes, or until a toothpick comes out clean. Bread will collapse a bit as it cools.
