Savory Cheddar Cookies: Keto-Friendly and Low Carb
I’ve been looking for a substitute for crackers since I started the Keto diet, and these savory cookies are the result of my experiments.
Nutrition in 8 cookies

1 c mild or medium cheddar cheese, shredded, room temperature
1 c fine-ground almond flour
- Preheat oven to 325.
- Mix and knead by hand until warm and smooth. Roll out 1/4 to 3/8ths inch thick and cut into desired size and shape with a knife.
- Arrange on cookie sheet lined with parchment paper. Bake 8–12 minutes. Do not allow cookies to brown, even on the bottoms.
Makes about 40 Cheez-it size cookies, but these will end up being more filling and substantial than cheese crackers. A serving size is 6–8 cookies.
