Quick cocktails


OK, so, a couple of recipes and how to make the salted prosecco syrup:

Rhubarb sour:

50ml Rhubarb Vodka

10ml Aperol if you have it

1 egg white

Juice of half a lemon (should be about 15ml)

10ml Salted Prosecco

Shake really hard with ice and strain if you have a strainer, or just serve with the ice you shook with.

Prosecco Syrup punch (for 4 drinks, scale accordingly)

100ml Gin

100ml St Germain Elderflower

500ml Green Tea

Juice of a lemon

50ml Salted Prosecco Syrup

Salted prosecco syrup

1 bottle prosecco

500g caster sugar

peel 3 lemons (just the yellow bit, not the pith)

10-20g salt (to taste)

Simmer the the prosecco without a lid with the sugar until the volume is reduced by about half. It will be get lovely and thick. Add the lemon peels and salt and simmer for about 10 minutes more and then let cool and keep in a bottle…
