Delightfully precarious.

The Namaste White Belgian-Style Witbier is like the giant, homemade Jenga tower you’re constructing on a summer afternoon on your back patio. From the deceptively simple blocks of a witbier, Dogfish Head have built up layers upon layers of flavor: there’s dried orange, coriander, peppercorns, and lemongrass, each distinct and laying atop one another. Each sip seems to bring a new flavor into prominence, and as they pile upwards it all seems rather precarious, like the beer itself is teetering, as if since its inception the beer has always been on the verge of collapsing into a mess. That instability is a big part of the pleasure in drinking it though. You enjoy seeing how many levels can be added while keeping the beer as balanced as possible. And while the final structure may not be an architectural masterpiece or on a par with Dogfish Head’s more famous offerings, it is fun to drink, especially outside on a lazy Saturday afternoon.

Pairings: lemon grilled chicken with arugula, over-sized yard games, the beads of sweat from your faintly trembling hand as you try to pull out a block you know you really shouldn’t, because what the hell, why not.
