There is no wine, no truffle, no ham, no cheese and no industry in here. If you want to get to the heart of the thing, -this- is where to start.
With or without a certain dose of animality.


Appetizers
Pane unto (Bread & oil)
Ingredients: durum wheat flour, water, one pinch of sea salt, virgin olive oil.
Make a dough. Divide in small portions. With a hand or a bottle, flatten. Put it on a steaming rock. Eventually, put it directly on the fire, and turn it over a couple of times. When ready, add oil and salt. Eat it immediately.
Acceptable sophistication: rub a clove of garlic on the bread before adding the oil.

First course
Pasta al pomodoro
Ingredients: the dough obtained in the Pane unto recipe, 3-4 red sun ripened tomato, virgin olive oil, sea salt.
After flatten the dough as much as possible, cut it with a knife in the desired shape. Drop the pasta in abundant boiling salted water and blend.
In the meantime, cut the tomato, add a pinch of salt and a generous splash of oil.
Strain the pasta, mix it with the rest and eat immediately.
Acceptable sophistication: add two leaves of basil and 1/2 clove of garlic.

Second courses (sea)
Polpo (Octopus)
Ingredients: being at the sea.
In the early morning, swim at a rocky beach and find an octopus. Take it out from the water, bite his head to kill it, beat it several times on a rock to make its flesh tender. Rinse it again in the sea water and eat immediately.

Intervallo
Erbette di campo (Wild weeds salad)
Ingredients: an uncultivated field, virgin olive oil, good wine vinegar, sea salt.
Make a walk in a clean, open field. Collect as many different edible herbs and plants (borage, nettle, dandelion, wood sorrel, chickweed, pigweed, etc.). Wash them carefully, broke them with your hands in a large terracotta bowl. Add salt, vinegar and stir. Add the oil and stir.

Second courses (meat)
Cacciagione (Game animals)
Ingredients: a good forest, a weapon, some oak or olive wood, sea salt.
Go hunting for woodcocks, partridges or wild boars. When the animal is clean, and its meats are ready, make a fire and roast. Add some salt. Eat it immediately.

Dessert
Fichi (Figs)
Ingredient: a fig tree
On a hot sunny day, find a good, wealthy, fig tree. Take a fig, open it with your fingers and check there is no wasp or other insects inside. Remove the peel and eat it.

Drinks
Acqua di fonte (Source water)
Ingredient: fresh, pure, crystal clear water from a mountain source.
Don’t use a glass, but simply drink the water from the source, and also wash your face with it.
