I absolutely love kimchi.. unfortunately it’s kind of bittersweet (figuratively) for me whenever I have it now, the American made kimchi never tastes as good as the stuff made in South Korea, even the fresh stuff sold at the little whole in the wall Asian markets clearly made by Korean immigrants. Maybe slight difference between American and Korean grown vegetables, maybe the significant difference in the air while it’s being fermented, probably a bit of both, either way it’s not quite the same.
