Lamb Kofta with Tzatziki and Pitta

I love these and the boys do too. Children always love playing with wraps/pitta and getting their fingers stuck in. Then again so do I!

Ingredients
- 350g lean Lamb mince
- 2 tsp ground cinnamon
- 2 tsp ground cumin
- 4 spring onions, trimmed and finely sliced
- 2 cloves garlic, peeled and finely chopped
- ½ cucumber
- 1 large tomato
- 16 black olives
- Splash of sherry vinegar
- Small handful of mint leaves to serve (optional)
Method
- 1. Preheat grill to maximum.
- 2. Tip the lamb mince in a bowl and add the spices, spring onions, garlic and a generous pinch of salt and pepper. Mix the whole lot together, the best way I find is to dig your hands in.
- 3. Shape the mixture into 4 equal sausage shapes and place them on your grill tray. Grill the koftas close to the element for 5 minutes before turning and continuing for a further 5 minutes.
- 4. Whilst the koftas are cooking roughly chop the cucumber and tomato into similar sized big chunks, toss them in a bowl along with the black olives and sherry vinegar. Mix the ingredients to lightly coat in the vinegar.
- 5. When the koftas are cooked through remove from the oven and serve up with your chunky salad and an artisan scattering of mint leaves.

My family love tzatziki yogurt dip. Quick and easy to make and goes so well with these yummy Kofta’s.
- Chop 1/2 a cucumber into small pieces. Chop a handful of mint leaves into small pieces
- Add cucumber and mint to Greek Yoghurt.
- Squeeze the juice of 1 lemon into the yoghurt and stir well. Season with salt and pepper if you prefer
