From the research I’ve looked into, fasting starts directly after your last meal unless otherwise stated. So if your last meal is finished at 8pm and you went until 12pm the next day that would be a 16h fast.

A more accurate way to measure your fast would probably be to start the clock when you’ve got an empty stomach. The problem with that is it all depends on how quickly your body can digest your last meal. High fat meals can slow the digestion of carbohydrates so I would assume it would also slow digestion as well.

I have heard of Valter Longo but I haven’t looked into his research in detail. I’ll check it out!

My inflammatory markers have not changed but it is difficult to tell without having constant blood work tested (I do it ona m monthly basis). I do use fasting to reduce inflammation as well as giving my digestive system a break. I always notice a difference in my digestion and overall health when reintroducing fasting
