Today Recipes | Lydias Turkey Meatloaf with Mushroom Sauce Recipe — I love this creative meatloaf, Marcie! I’m actually not a huge meatloaf fan because I ate it too much growing up, so I love trying different variations of it. I’ve never tried a turkey kind, and the mushrooms are just calling my name. This sounds like a wonderful weekend meal!

Regarding eating, here’s some meatloaf for ya. The goal wasn’t a cheap meatloaf, either — this you have major flavor. My family members are always happy about meatloaf, so I always want to come on top of different varieties to keep things fresh. Mushrooms are something of course you like, and this meatloaf has mucho mushroom flair. In my opinion, the more mushrooms the bettah.

One of the best ways I understand to beef up the flavor in a dish has been dried porcini mushrooms because they taste — well — beefy. Maybe meaty is a better word, nevertheless, you obtain the point. You soak them in water approximately 20–30 minutes, then chop them up and discard any tough stems. The reconstituted chopped porcinis say hello to the ground turkey with various other goodies, and there are many plans with the liquid. Enjoy!

Ingredient

  • ½ cup dried porcini mushrooms
  • water, enough to cover the mushrooms

For the meatloaf:

  • 1¼ lb. lean ground turkey (not extra lean turkey breast)*
  • reconstituted chopped porcini mushrooms
  • ¼ cup panko breadcrumbs (or substitute with gluten free breadcrumbs)
  • ¼ cup finely chopped shallots (about 2 medium)
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 large egg
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

For the sauce:

  • 1 tablespoon extra-virgin olive oil
  • 16 ounces baby mushrooms, bottom stems removed and sliced ¼” thick
  • ¼ cup white wine
  • reserved porcini liquid, strained
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • water or chicken stock for thinning, if necessary
  • salt and pepper, to taste
  • 1 tablespoon softened butter
