I don’t ;)
Here’s why: in my task manager, I’m often gathering together tasks from very different projects and areas into one Today list. I might jump around to a dozen different projects in a single day’s work. Because I’m removing them from their context, I need tags to be able to give them context (like work vs. personal).
Evernote is very different. I only use it when working on a discrete project or deliverable, so the context is given by the notebook a note is in.
