I got very hungry reading your descriptions about the variety of phở. I like that aural similarity to “feu”, the French word for fire, and the fact that so much of the street-food happens over open flames. But I can’t help but wonder about “ngưu nhục phấn” and how I “hear” the similarity of those three words with 牛肉粉. At least that’s how it works in the Cantonese side of my brain. Naturally, I miss my short time in Saigon; I’d like very much to eat my way through the rest of the country. Thanks for writing this, Barbara.
