Violet Bakery in East London has been chosen to be the bakers for Prince Harry & Meghan’s Wedding in May.

Every royal wedding since that of Harry’s great-great grandmother Queen Victoria has been celebrated with a slice of fruitcake. However, Kensington Place announced in a series of tweets that the couple will be straying from this tradition.

The honor of creating this cake has fallen to pastry chef Claire Ptak, who was raised in California and now owns East London’s bakery Violet Cakes. She has been enlisted to create a “lemon and elderflower cake incorporating the bright flavours of spring” for their May 19 wedding. The centrepiece will be covered with buttercream and decorated with fresh flowers.

In a statement released by Kensington Place Claire expresses her delight at being tasked with creating this cake and further states that by “Knowing that they really share the same values as I do about food provenance, sustainability, seasonality and most importantly flavour, makes this the most exciting event to be a part of.”

Prince Harry and Markle are not the first royal couple to deviate from more traditional cake choices. At his wedding to Kate Middleton in 2011, Prince William requested a “groom’s cake” made of cookies and chocolate. On this occasion however, the cake was served alongside the official weeding cake — a fruitcake.
