- 1/4 teaspoon salt
- 1/2 cup (1 stick) cold unsalted vegan butter, cut into small pieces
- 1 egg, beaten
- 1 teaspoon vanilla extract
For the Blueberry Filling:
- 2 cups fresh or frozen blueberries
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest (optional)
Instructions:
1. Preheat your oven to 375°F (190°C). Grease and line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving some overhang for easy removal.
2. Prepare the Crust and Crumble Topping:
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt.
- Cut in the cold butter using a pastry cutter or two knives until the mixture resembles coarse crumbs.
- Add the beaten egg and vanilla extract, and mix until the dough comes together.
- Set aside about 1 cup of this mixture for the crumble topping.
3. Make the Blueberry Filling:
- In a separate bowl, combine the blueberries, sugar, cornstarch, lemon juice, and lemon zest (if using). Mix until the blueberries are coated evenly.
4. Assemble the Bars:
- Press the remaining crust mixture into the bottom of the prepared baking pan to form the crust.
5. Spread the Blueberry Filling:
- Evenly spread the blueberry mixture over the crust.
6. Add the Crumble Topping:
- Sprinkle the reserved crumble mixture evenly over the blueberry filling.
7. Bake:

- Allow the bars to cool completely in the pan on a wire rack. Once cooled, use the parchment paper overhang to lift the bars out of the pan.
