Blueberry French Toast Casserole Recipe

Ingredients:

- 2 cups plant-based milk

- 1/2 cup vegan heavy cream

- 1/4 teaspoon salt

For the Streusel Topping:

- 1/2 cup all-purpose flour

- 1/2 cup brown sugar, packed

- 1/4 cup cold unsalted butter, cubed

- 1/2 teaspoon ground cinnamon

Instructions:

1. Grease a 9x13-inch baking dish and place the cubed French bread and blueberries in it, distributing them evenly.

2. In a large mixing bowl, whisk together flax, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until well combined.

3. Pour the flax mixture evenly over the bread and blueberries in the baking dish. Press down on the bread cubes with a spoon to make sure they soak up the custard.

4. Cover the baking dish with plastic wrap and refrigerate it for at least 4 hours or overnight to allow the bread to soak up the custard.

5. In the morning, preheat your oven to 350°F (175°C).
