Do it without humor. Seriously. Having worked for many years in a place with too much to do and not enough workers you have to make a priority list with your boss, target dates and when they ad something new, ask what you should move down.
My coworker used to keep a list of his projects on a white board in his office for a real visual THIS IS WHY I’M BUSY. It works.
