This is the most erotic essay ever! You get roux. Most folks don’t see how alive and vibrant roux is, how temperamental but responsive it is to the lightest touch.

An aside, when James Carville says, “He burned his roux” I suspect few people have as intimate understanding of what he truly means by that. I’ve known only a few Cajuns in my life and I often wonder if that’s a common saying among them. But I suspect Carville also understands roux.
