Coffee is a lot like wine (and cheese, and olive oil, all the good things): the location, climate, weather, variety and maker are all important. Thanks for this, I don’t know much about coffee regions and what’s important. I would have thought a “dark roast” would be where you get the nutty, earthy flavours, bitterness would come from taking it too far? There’s a hipster trend in Australia for a more tangy/sour coffee, I thought it was just a weird taste profile that young ppl preferred due to their younger palates, maybe they just do it to be different, who knows. luckily we are overflowing with cafes here in Aus, this is the land where Starbucks failed!
