Rava paniyaram (Amma recipe)

Rava Paniyaram (semolina balls)

Ingredients:

Rava (Roasted) from Indian shop (Semolina not tried yet) (pic 1)

Maida- White flour (possible alternative is from german supermarkets)

Sugar (Fein)

Method:

Rava: Maida: Sugar = 1:1:3/4

400g Rava for approx 30 balls

Mix well by adding small amounts of water until it reaches a mushy consistency (pic 2)

Do not add more water at this stage as the sugar melts giving away more water.

Let it rest for atleast 1 hour

Add enough water and mix well to get a flowing consistency

Test hot oil with a small drop of dough made and wait until it rises and turns brown

Once the oil is ready, use a shallow spoon to add balls of dough into the oil. Add one after the previous one raised in the oil so they don’t stick to each other.

Topple them so they turn evenly brown on both sides.

Once fully brown remove them and dry on tissue paper to remove excess oil.

Paniyaram ready.
