Paneer is a type of cottage cheese that is used extensively in Indian cooking. Often used as a substitute for meat in vegetarian cooking, its structure helps absorb the flavors of different spices used.
Making paneer at home is super easy. Start by boiling milk and add curd ( 3 parts of milk to 1 part of curd) little by little.
The milk ultimately curdles, forming lumps. You should see the water separate and have a light greenish tinge to it.Put this mixture on to a cheesecloth — if you do not have one, use a clean piece of cotton cloth.
Tie up the cheesecloth and hang it. The water should drain creating a firm nice paneer. This process usually takes a couple of hours.
The finished paneer should be firm enough to be cut with a knife.
