Gorgonzola is an aged blue cheese that is typically produced in the north of Italy, in the regions of Lombardy and Piedmont. This cheese takes three to four months to ripen, and it is made from unskimmed cow’s milk. There are two main types of Gorgonzola: dolce and piccante.

Gorgonzola Dolce is sweet and creamy with some hints of spice. In contrast, Gorgonzola Piccante (also called Mountain Gorgonzola, Gorgonzola Montagna, or Gorgonzola Naturale) is firmer and crumblier, with a more piquant flavor.

The Dolce variety is mostly used to achieve flavor and creaminess in pasta sauces; it can also be served with a slice of bread. The Piccante variety, with its more robust flavor, is typically served as part of a cheese platter or paired with a sweet dish.
