Can I copy and paste this article to address the Italians? I could easily replace “paella” with “lasagna”, “chorizo” with any random ingredient from the fridge, Valencia with a picturesque medieval little town and it would perfectly fit the Italian mentality. I remember a similar fight years ago around the “cacciucco”, the traditional recipe of Livorno, where one of these modern chefs dared to replace one of the least edible fish with something more gentle, and everybody raged against him. Thanks for this post: it is not about a paella recipe, it is about the mentality of being conscious of traditions and looking forward at the same time. This unfortunately is not the case for many inward countries struggling to adapt to globalisation.
