First of all, your cookies tasted great. I liked the freshness (you achieved what you were aiming for!) and the chewiness (personal preference). Your brainstorming was also very in-depth and thoughtful.

Next, I wish you would have made a little bit larger leap in the iteration step. You certainly solved a problem that you had with baking, which was great, but nothing really changed in the cookie itself.

Finally, what if you expanded the definition of the traditional cookie? You were creative with the flavors and delivered them in a tasty package but the cookie form was very similar to a basic sugar cookie. That’s just my opinion, though, if that was what you were going for it worked very well.
