Healthy living is actually hard or red cabbage salad from middle east

Healthy living is hard, especially when you are used to eat almost everything you want and whenever you want. And of course, when all you were ever doing was dreaming about gaining more weight (yes, such crazy people actually exist).

To me gaining weight meant eating a lot of high-fat food (what about porridge you may ask? Nah… This was never in my meals list, because I never liked its taste, even if it’s really healthier and more effective), but over the time this just made me feel pain in my stomach and find new friends in gastroenterology department.

Now I feel much better, thanks to my precious fiancé. My man loves fitness and we both hate what high-fat food makes to our bodies, so if I want to cook something for us both (remember, we’re living together), it should be something healthy. I can forget my pain sometimes, but not my man’s body, he he!

So today one of my meals was red cabbage salad from middle east (I always dreamed to visit India or Egypt). Here’s what you need:

  • 1 small red cabbage
  • 200 g of peanuts
  • 100 ml of sesame oil
  • 3 tbsp. of soy sauce
  • 20 g of ginger
  • 1 clove of garlic
  • 1 piece of lemon
  • 1 tbsp. of brown sugar

What’s next?

  1. Chop a cabbage into small pieces, sprinkle with lemon juice and stir it up.
  2. Preheat oven up to 180 degrees. Place the peanuts in a baking tray with baking paper and put them into the oven for 15 minutes. After removing from oven wait until they cool, then wipe the peanuts shells with your fingers.
  3. Prepare the dressing: mix the sesame oil with the soy sauce, lemon juice, sugar, grated ginger and garlic clove.
  4. Finally mix the cabbage with nuts, drizzle with the sauce and stir it up.
