Apple cider vinaigrette
Time for lunch?
Treat yourself to a summer salad with a drizzle of dressing and a good book in the sunshine.
- 1⁄3 cup apple cider vinegar
- 3⁄4 cup olive oil
- 2 tablespoons water
- 2 tablespoons honey
- 1 teaspoons salt
- Pepper to your taste
- 1 teaspoon French mustard optional
Place all of the ingredients into a blender and gently combine. Then pick up the speed just a little and slowly add the olive oil until well mixed. This can also be done by hand with a jar that has a tightly fitting lid. This time add all of the ingredients and shake vigorously. if you don’t use all the dressing, just put the lid back on and pop it in the fridge for later.
Prepare a green salad with some finely sliced green apples and toasted pine nuts sprinkled on top. To finish add the dressing and sit back and and relax.
