Sausage carrot stew
Ingredients:
1 lb spicy Italian sausage
1 lb carrots
1 cup heavy cream
3 tbsp soy sauce
2 tbsp curry powder
1/4 cup kale
2 oz cheddar cheese, diced
olive oil
salt and pepper to taste
Preparation:
- Toss kale in olive oil, brown in broiler until dark and crisp. Crumble and put aside.
- Brown sausages in 2 quart pot. Set aside.
- Add carrots to pan, boil in 1 quart of water until very, very tender.
- Slice sausages thinly.
- Add 3 tbspn olive oil, mash carrots or blend with immersion blender.
- Add everything. Stir. Season to taste.
Makes four servings.
