  • Gyūdon traces its roots back to an old dish called gyūnabe, where thinly sliced beef was cooked with vegetables in a pot.

  • Originally, gyūnabe consisted of cuts of beef simmered with Welsh onions and miso. This method tenderized the meat and neutralized its smell.
  • By the late 1800s, a variation emerged, using a special stock called warishita (a mix of sweetener like sugar or mirin and soy sauce). This version included ingredients like shirataki (konjac noodles) and tofu.
  • Eventually, this evolved into the gyūnabe served with rice in a deep bowl (donburi), becoming gyūmeshi or gyūdon.
  • In 1899, Eikichi Matsuda opened the first Yoshinoya restaurant in Tokyo, where gyūdon was served. It was also sold in street food stands.
  • After the Great Kantō Earthquake of 1923, gyūdon gained widespread popularity, transcending class boundaries.
  • Around this time, gyūdon took its present form: a bowl of rice topped with thin slices of beef and onions (tamanegi).
