Fried rice is a quick, flexible, and super easy dish to make using whatever is in your fridge, making it a great use for leftovers.

With the recipe listed below, making fried rice is a simple. It's an easy process: preheat your skillet, add oil and aromatics, and then, if necessary, add raw proteins. Toss ingredients briskly to achieve that toasty, golden-brown colour that indicates intense flavour before adding rice and veggies.

Here's how to prepare cooked rice if you don't have any leftovers:

In a saucepan, combine 2 cups white rice and 4 cups water; bring to a boil.

Lower the temperature, cover, and simmer for 20 to 25 minutes, or until the rice is soft and the water has been absorbed.

Take off the heat source and allow it to reach room temperature.

Before using the rice in this recipe, cover and refrigerate it for eight hours, preferably overnight, for the best results with fried rice.

Ingredients

⅔ cup chopped baby carrots

½ cup frozen green peas

2 tablespoons vegetable oil

1 clove garlic, minced, or to taste (Optional)

2 large eggs

3 cups leftover cooked and chilled white rice

1 tablespoon soy sauce, or more to taste

2 teaspoons sesame oil, or to taste

Combine the ingredients.

Place carrots in a small saucepan and cover with water. Bring to a low boil and cook for 3 to 5 minutes. Stir in peas, then immediately drain in a colander.

Warm up a wok on high heat. Add the vegetable oil and heat for about 30 seconds, stirring in the garlic, peas, and carrots. Add the eggs and immediately whisk to scramble them with the veggies.

Add cooked rice and stir. Toss the rice to coat with the soy sauce. Add a little sesame oil and mix once more.
