Cajun Sausage with Beans over Rice

Tonight for dinner I was feeling a bit…. spicy! So, I decided to make my spin on the traditional Southern dish Red Beans and Rice. Instead of red beans my recipe has pinto beans and Cajun Sausage from our local butcher.

What you will need:

2 Cups of White Rice

1 pound of Cajun Sausage

1 white onion, diced

1/2 green pepper, diced

1 T tomato paste

1 can pinto beans, drained

1 Cup of beef broth

1 T chili powder

2 tsp black pepper

1 tsp salt

1 T Cajun Seasoning

To begin the recipe, drain the can of pinto beans and put into a sauce pot. Simmer beans on low for 10 minutes. After 10 minutes the beans should begin to soften. Next, add in the diced onion, green pepper, 1 cup of beef broth and 1 Tablespoon of tomato paste. Stir the beans, onion, green pepper, beef broth and tomato paste until incorporated. Simmer for 15 minutes.

While the beans are simmering for the second time begin your rice. For every cup of white rice add 2 cups of water. Add 1 cup of rice and 2 cups of water to a small pot. Once it begins to boil turn the heat down to simmer and cover for 25 minutes.

While the rice is cooking and beans are simmering. Chop your Cajun Sausage into 1/4 inch rounds and saute over medium heat until browned on both sides. This will take about 5 minutes per side. After the sausage is browned add to the beans and stir in 1 T chili powder, 2 tsp black pepper, 1 tsp salt and 1 T Cajun Seasoning. Tip: If you don’t have Cajun Sausage, Polish Sausage will work just as well.

Serve the sausage and bean mix over the rice and enjoy!!
