IDEAS

PROTOTYPING

1) APPLE STEAK

When looking the site telling food match, I saw cheese, apple and cranberry are good to serve together. But blue-cheese are too soft to fry. So we tried to find a hard cheese and found brie cheese.

INGREDIENTS (serving for 4 people)

A honey crispy apple

3 OZ Brie cheese

1/2 cup Water

1 cup Flour

Sugar

Pomegranate

Raspberry juice

RECIPE

*Sauce

① Pour the raspberry juice into a pot.

② Heat the juice on medium and high and add sugar.

③ Stir occasionally until thick and syrupy.

④ Add pomegranate seeds into the sauce mixture.

⑤ Remove from heat and transfer to a bowl.

① Slice apples & Brie Cheese into 0.8–1 cm thick.

② Make sliced apples and brie cheeses same size.

③ Heat about 3/8" vegetable oil to 375°F

④ In a small bowl, combine the flour, water, and salt.

⑤ Dip apples and brie cheeses into the ④ mixture.

⑥ Deep apple and brie cheeses in the oil. Let it cook for 60 seconds, then flip it over and cook until light brown on the other side, about 60 seconds.

⑦ Remove from the oil and set on a paper towel-lined baking sheet.

⑧ Put one deep fired apple, brie cheese and another deep fried apple in the order.

⑨ Pour the sauce over ⑧.

⑩ Enjoy

Person 2 “ The sauce is like a water, not syrupy. Maybe you need a work to make a sauce more syrupy.”

2)APPLE SALAD

When I think about an appetizer, salad comes first in mind. So I kept thinking how I can make a salad in a different way. Finally I got the idea making apple and cucumber into noodles. Eggs with mayo is one of my favorites,so I thought eggs with mayo would work well with apple& cucumber. I thought a balsamic would be perfect for a dressing sauces because it has less strong flavor than other dressing sauce such as Ranch, Caesar and etc.

INGREDIENTS (serving for 4 people)

1 honey crisp apple

1/2 cucumber

1 ½ TS Balsamic dressing

2 Grape

2 egg

4 ts mayo

1/2 ts salt

RECIPE

① Place eggs in a saucepan or pot and cover with cold water. Add some salt into water.

② Put pan over high heat and bring water to rolling boil.

③ Let the eggs stand in the hot water for 14–17 minutes.

④ Place the chopped eggs in a bowl and stir in the mayonnaise and salt.

⑤ Turn apple and cucumber into noodles with noodle maker.

⑥ Mix apple & cucumber noodle with balsamic dressing.

⑦ Spoon the egg salad on top of apple & cucumber noodle.

⑧ Cut grapes in half and put grape on top of egg salad.

3) Sunset Jelly

I had this idea when I saw the sodium alginate jelly example during the lecture. The round shape yogurt jelly make me think of sunset and I thought it would be very beautiful to have a “sea sunset” picture in the spoon.So I had this idea of having yogurt jelly as the “sun”, and blueberry jam as the the “sea”. Pineapple juice was also utilized with soy lecithin to make the shadow of the sun onto the sea.

INGREDIENTS (serving for 4 people)

3 Fuji apples

a pack of sodium alginate

2 Tablespoon Non fat yogurt

10 Blueberry fruit

2 tablespoon of blueberry jam

3 slice of blue cheese

RECIPE

① Make apple into apple juice (skin on).

② Mix the apple juice in a ratio of 1:1 with yogurt and stir.

③ Pour the mixed yogurt into the model and put it into the freezer for 40 mins.

④ Mix blue cheese, blueberry fruit and jam in the mixer.

⑤ Pour the frozen yogurt out from the model and put them into the prepared sodium alginate solution.

⑥ Take the jelly yogurt out and put it into the spoon with the blueberry jam.

Person 1 “ Use a yogurt which has more than 50 percent fat. Yogurt would not turn to be a jelly with a Non-fat yogurt ”

FINAL IDEA REFINEMENT

We got feedback that saying “ It is too sweet to serve as an appetizer I thought.”, so we decided to use different apple type, Granny Smith apple. Because Granny Smith apple has more tart taste. Also we updated the sauce, adding a corn-starch, to make a sauce more syrupy.

A Granny Smith apple because it is crunchy and tart.

3 OZ Brie cheese

1 cup Water

1 cup Flour

Powdered sugar

For sauce : 1 tea-spoon of Sugar , 1 table-spoon of Pomegranate, 1/2 cup of Pomegranate Juice, 1 tea-spoon of Potato starch
