I like your thinking both adding new ingredients on cookies and changing design of cookies. I never thought to bring 3 different tastes in a single cookie, not mixing all together and bake.

There are some parts mixing tastes of Pumpkin & Chocolate-chip, Pumpkin& Chocolate Espresso, Chocolate chip & Chocolate Espresso. I tried that parts. It was really good! People can taste six different tastes on a cookie!

I wish

I tried both Chocolate Chip cookies and chocolate espresso separately. I couldn’t find a big difference between it. I think your cookies will be better when you use different ingredients on three section.

What if :

What if putting water of brewed coffee, espresso bean and chocolate chips if you want to make cookie with chocolate and coffee. Then I think that smell and taste of coffee will be much stronger.
