The magic of “Scotch scones”

I love scones,I live in Perthshire which is described as the heart of Scotland. I agree with your recipe .One addition is instead of ‘heavy cream’ I use buttermilk or failing that yogurt.The chemical reaction means the mixture is light I also mix it with a table knife . The effect is to make the mix as light as possible so handle it as little as possible oh and yes …no sugar !
