Strawberry Watermelon Bubblegum on Ice

Watermelon is one of the most popular fruits in the world, and for good reason. Aside from being extremely refreshing, watermelon has a host of health benefits, including high levels of lycopene, an antioxidant that’s thought to protect against some forms of cancer, cardiovascular disease, and other age-related diseases. Watermelon is a great choice when you want to add some juicy sweetness to your frozen treat. Instead of making watermelon ice cubes, you can use watermelon syrup to flavor your ice. This recipe combines strawberry watermelon bubblegummy candies with sweet watermelon syrup for a deliciously fruity combination. These treats are a great way to use up leftover watermelon and offer a unique twist on a classic ice cream flavor. We’re big fans of the strawberry watermelon candies, but they’re also a great base for a watermelon ice cream. They have the same base as our Watermelon Ice Pops, so you can substitute the syrup for the candies and use those ice pop makers!

Make Watermelon Syrup

To make the watermelon syrup, combine 1/4 cup of sugar, 1/4 cup of water, and 2 cups of freshly cut watermelon in a blender. Blend until smooth and strain the mixture with a fine mesh strainer.

Bubblegum Ingredients

-1 cup sugar -6 cups watermelon juice, chilled -2 tablespoons cornstarch -2 tablespoons strawberry watermelon bubblegum syrup

Make the Base

Watermelon ice pops are a fun and refreshing summer treat. You’ll need to make the base first. Watermelon is not a freezer friendly fruit, but you can use store-bought frozen watermelon cubes if you prefer. Combine one cup of cubed watermelon, 1/2 cup of sugar, 3 tablespoons of lime juice, and 1 teaspoon of vanilla extract in a blender and puree until smooth. Pour into ice pop molds or paper cups with an opening at the top Cover with lids or plastic wrap and insert sticks. Freeze for at least 6 hours before serving.

Add the Syrup and Mix

In a large pitcher, combine the watermelon syrup and the strawberry watermelon candies. Gently mix until combined. Fill each ice pop mold to the top with the strawberry watermelon bubblegum mixture. Freeze for 4 hours or until solid. To serve, remove from freezer and twist off of mold. Serve on a stick or in a bowl with some additional watermelon syrup drizzled over top.

Finish the Base

This recipe starts with the base of some strawberry watermelon bubblegum. It’s a variation on our Watermelon Ice Pops, so you can substitute the syrup for the candies and use those ice pop makers! Start with your base of watermelon gummies and strawberry bubblegum. Cut the gummies into pieces and layer them between a layer of bubblegum. Freeze this until it’s rock hard then cut it into cubes. This will be your watermelon base.

Add the Bubblegum

1. Take your strawberries, watermelon candies, and ice cubes and put them in the blender for about 30 seconds or until it’s a smooth consistency. 2. Get a bowl and pour the ice cream mixture into it. 3. Put some bubblegum on top of the ice cream and enjoy!

Freeze the Base

1. Line up your ice pop molds and freeze them for at least a few hours, making sure to leave space in between each mold so that you can easily fill them without spilling. 2. Once the pops are frozen, take them out of the freezer and allow them to sit for 10 minutes. In the meantime, prepare your strawberry watermelon syrup by adding 1 cup of watermelon juice and 1 cup of strawberry syrup to a blender and blend until well combined.

Using an Ice Cream Maker

If you don’t have an ice cream maker, you can still make these watermelon strawberry pops. All you need is a mold to freeze them in and some small paper cups to insert the sticks into. The mold should be shaped like ice cream cones so that you can remove the finished pops from the molds. You’ll also need wooden or bamboo skewers for the sticks. You’ll want to pre-freeze your molds by placing them in your freezer for at least 2 hours before making the popsicles. Once they’re frozen, fill each one about 1/3 of the way with watermelon syrup, put on a stick and then add more syrup until it’s filled all the way up to the top. Freeze for at least 3 hours before serving!

Final Thoughts

Make sure to adjust the syrup accordingly if you use different sized popsicles. You’ll get more popsicles out of a larger size, but they’ll need less syrup. If you’re not in the mood for a strawberry watermelon flavor, try making pistachio ice cream instead!
