🍪Since the sweet bean soup is a traditional and popular dessert in Asia. I really want to share it with my class. So I was thinking that if I can combine West and East dessert into one, the result turned out well. I was only adding red bean paste in the cookies, and wondering what else should I put inside the cookies. In winter solstice, the sweet bean soup would also serve with glutinous rice dumplings. This is how my idea came up, to add rice cake in the filling.

🍪The updated recipe:
Butter 220g
Sugar (for cookie dough) 100g
A pinch of salt and sesame
All-purpose flour 260g
Red beans 1 bag
Rock sugar 100g
Glutinous rice flour 150g
Sugar (for rice cake) 50g
Seaweed few sheets
Corn flour 25g
Milk 200ml

🍪I am very happy with the result, the taste of the cookies is rich and the combination of the cookie, red bean paste, and rice cake are perfect. Since I reduced the sugar in the dough, the red bean flavor really stood out. The outer layer was made thinner so that you won’t feel thirsty and dry while you eat the cookies.
I recommend eating the cookie when it is hot because the rice cake would be softer, and the melted red bean paste would taste better. I wish that I can bring the hot cookies to class.

_________________________________________________________________🍪 I brainstormed in different categories, I want to share with my class about my culture and my background. I think of some traditional food, such as egg tarts, mooncake, and sweet red bean soup, etc. On the other hand, I would like to design the cookie that can tailor to popular taste, like donuts or cheese. I also want to try to create cookies that I like, such as cheesecake and pork floss.
🍪 I received all the advice from my family and friends, and reconsider the ideas. I picked sweet bean soup cookies and peanut pork floss cookies to be my idea 1 test and idea 2 test.


💧Idea Test 1 (Sweet red bean soup cookies)

🍪Sweet bean soup is a traditional dessert in Asia. It is very popular in Hong Kong. I want to share the taste of the dessert to everyone. Since this is a liquid dessert, I changed a bit of the recipe to make the soup in a paste that thick enough to put into the cookie dough.
🍪The result worked great and I like the texture of the cookies, they are soft inside and crunchy outside. However, I think I should reduce the amount of the sugar for the cookie dough because the red bean paste is already sweet enough. Also, I would like to add some rice cake in the filling to increase the texture of the cookies. Rice cake and red beans soup is a very nice combination. I would like to try to add a layer of the rice cake in the filling to see how it works. Also, the cookie dough layer was too thick and made us feel thirsty while eating the cookie, I have to make it thinner.

🍪Directions:
1️⃣Red bean paste: Pre-soaked the red beans for 3 hours, add rock sugar and water to cook for 1 hour. (I gave up step two that shown in the picture because I changed to use seaweed instead of red beans to decorate the cookies)
2️⃣Cookie dough: Mix butter, sugar, a pinch of salt and flour into a dough.
3️⃣Since the red bean paste was too soft, I shaped the paste into small disks and freeze until firm.
4️⃣Fill in the red bean paste into the cookie dough and shape them into the cookie shape.
5️⃣Freeze the cookies with red beans paste in the freezer for 15 minutes.
6️⃣Bake the cookies at 350°f for 20 minutes.
7️⃣DONE!

-Seaweed 1 sheets
-All-purpose flour 0.4 cup
-Butter 37g
-Sugar 17g
-A pinch of salt
-Red beans 1/3 bag
-Rock sugar 50g

💧Idea Test 2
(PEANUT PORK FLOSS(Rousong) COOKIES)

🍪Pork Floss(Rousong), originating in China. It is a very common dried meat product that can be snacks or used for many foods in Hong Kong. My parents always use pork floss in different dishes. I believe that it would be tasty if I put pork floss on a cookie. On the one hand, I can make a cookie that is not as sweet as a dessert, also can present some local food from my hometown. I added honey coated peanut with pork floss because they are both sweet and salty, also rich in taste.
🍪The result was surprisingly good and delicious. The pork floss and the cookies work great together. The taste of the cookie is salty but also with a little sweet taste. However, the peanut flavor was too strong, it covered the pork floss taste. I will reduce the peanuts and add some pork floss into the dough to make a pork floss flavored cookie dough to increase the pork floss flavor.

🍪Directions:
1️⃣Cookie dough: Mix butter, sugar, a pinch of salt and flour into a dough, I added more salt and white pepper to make the dough taste like savory food.
2️⃣freeze the dough for 1 hour.
3️⃣After the dough firm, cut the dough into cookies shape.
4️⃣Stick the peanuts and pork floss on the top of the cookies, I also put some sesame and seaweed to decorate the cookies.
5️⃣Put the cookies back to the freeze for 15 minutes.
6️⃣Bake the cookies at 350°f for 15 minutes.
7️⃣DONE!

-All-purpose flour 0.7 cup
-Butter 60g
-Sugar 20g
-Salt 1/3tsp
-A pinch of sesame and white pepper
-Seaweed 1 sheet
-A handful of peanut and pork floss

🍪I picked sweet bean soup cookies as my final decision. Because it is more tailor to popular taste and more suitable as a snack. In test 1, the result of the cookies is good and tasty but the cookies dough was too sweet. I reduce the amount of the sugar, and I also added some red bean paste with brown sugar into the dough while I was making the cookie base because I wanted to make a red bean flavored dough.
Moreover, I added one layer of the rice cake in the filling to make the cookies have a richer texture. I also made the cookie thinner then test 1’s cookies because the cookie dough was too thick, I and my friends felt thirsty when we were trying idea test 1. For the appearance of the cookies, I use some seaweed and sesame to decorate, I cut the seaweed in different patterns and stick it on top by using water.

🍪How to make the rice cake:
1️⃣low heat to cook the glutinous rice flour
2️⃣mix milk, sugar, corn flour, and glutinous rice flour into a runny paste
3️⃣Steam the mixture for 20 mins
4️⃣Stir the mixture into a soft dough
5️⃣DONE!
