Veggie Slam

Quick, easy veggie/vegan dish that is protein-rich.

Ingredients

  • Sliced Baby Bella Mushrooms
  • Black Beans
  • Zucchini Squash
  • Carrots
  • Green Onions (Sub for Red or Sweet Onion)
  • Cilantro
  • Garlic
  • Spices

Prep

Black Beans: (NOTE: If you buy dry beans, you will need to put them in water and let them soak overnight.) Rinse your beans off (LOL).

Baby Bella Mushrooms: Rinse and slice if you have uncut mushrooms.

Squash, Carrots & Onions: Rinse and chop.

Cilantro and Garlic: In a food processor, or if you have good fine dicing skills with a knife, finely dice.

Spices: Spices are mostly up to your palate. I typically use salt, pepper, Italian seasoning and crushed red pepper.

Cook

  1. Heat a skillet over medium-high heat and add a goop of Extra Virgin Olive Oil.
  2. Add the onions, garlic and cilantro and stir for 30 seconds.
  3. Add the rest of the veggies except for the beans. Fry and stir the mixture frequently. Add spices. Cover when not stirring to also allow moisture to steam the veggies.
  4. In a separate skillet, fry and stir the beans over medium heat until they beans start to break down. Remove from heat and set aside.*You could cook the beans with the rest of the veggies, but as they break down they make the mix much less attractive. See final image for proof.
  5. Finally, combine everything together and eat, or put your veggies in a tortilla for a delicious veggie burrito. Also, consider adding siracha to the final mix.

NOTE: If you want to add some extra protein to the mix, sprinkle on some nutritional yeast!

As promised, if you mix everything together, the beans make it look pretty unattractive. Wrap it in a tortilla and you won’t have to bear the sight.
