• 400 g plain flour (type 0)
  • 100 g semolina
  • 100 ml sunflower oil (cold pressed) (I used canola oil)
  • 100 g Light muscovado sugar (I made 1 cup of dark brown sugar using 1 cup granulated sugar + 2 Tbsp molasses… damn that’s why the pastry is so dark)
  • 1 egg yolk (fresh from the backyard!)
  • 1 pinch table salt
  • milk (to bind) (I probably ended up using 1/2 c of soy milk)

The Dough is a simple recipe.

3.5 cups all purpose flour

1 cups granulated sugar

1.75 sticks of butter

2 egg yolks (set aside whites for filling)

1/4 cup orange juice

.5 tsp vanilla extract

.5 tsp lemon extract

1 Chicken (fair sized), 1/2 lb. minced meat (pork and beef), 1 egg, 1 tablespoonful chopped parsley, 1 cup breadcrumbs, 1 hard boiled egg, 2 tablespoonfuls grated cheese, Salt and pepper to taste.


Clean and wash the chicken well, remove and dispose of the entrails with the exception of the liver (this may be used for the filling). Clean the inside of the chicken, wipe well and rub inside with half a lemon.

1 medium sized rabbit, 1/4 lb. lard, 1 small tin tomato paste, 1 bay leaf, 1 small tin peas, 1 lb. onions, 1/4 pint red wine, pastry.


Cut the rabbit in fair-sized pieces and sprinkle with vinegar or wine. Chop the onions and fry in lard. When onions are done, remove from pan and fry rabbit in same juice.
